“Can I use this headset to listen to dictation and transcribe (type) it? I would be using a foot pedal to control the dictation. Too many cords right now.”

The H600 Wireless Headset will simply extend your PC audio and mic to the headset instead of the speakers or built in mic. It should work, as it will not interfere with any software or program you use for dictation.
