The baskets get very hot so better to pre load before hot. obviously the unit would cool quickly if removed empty to load requiring reheat to cooking temp. Cooking thicker meat with temp probe works great. Internal temps of meat continue to rise after removing meat from units. Probe temps match those from our meat thermometer.
