“I have a Sony Projector that has never been professionally calibrated with pro equipment.. does this "TV" calibration also go for Projectors? Is the equipment non-screen touching and up to date? I have a screen that should not be touched”

they can definitely calibrate your projector....but when they calibrated mine they used a spectrometer or whatever and that had to be placed against the screen. If you go into the store to set up calibration just have a blue shirt call their local calibration agent (there's usually only 1 or 2 in an area).
