A: Press right bumper to release the hand brake. and Right trigger is gas. If your talking about getting the truck to move in mud and off road, then that going take more explaining to do. I suggest you read start the game, and follow and read the tutorial at the very start. It is very straight forward, and will teach you all you need to know.
