So, when is the launch date of the Series X/S? null

Launch was technically 11/10 I believe. The series x/s is difficult to get a hold of due to a shortage on parts, I believe PS5 is experiencing the same issue for the same parts. Best thing to do (really only thing to do) is keep an eye out for stock info and try to get on the website and be diligent. Have all of your pay info saved and updated ahead of time so you can get one in your cart and pay as quickly as possible.
