“I purchased a headset over a week ago, and it was only shipped yesterday. I'd cancelled purchase of the 2 yr Accidental Geek Squad Replacement because I wasn't sure we were even going to receive the headset. Can I still purchase the warranty now?”

I would ask Best Buy, let them know the situation, but I purchased when I ordered and picked up from the store.
