“Hi I wear Bluetooth compatible hearing aids that link with iPhones with the Mfi. Would I be able to link them to the the watch without having to connect it to an iPhone ? I currently have a Pixel 2.”

I have linked my Bluetooth headphones to my watch and not my phone. This allowed me to go on runs without dragging a phone alone with me.
