• Yes if you download optional sleep apps. I use Pillow. It's free but has a premium version that also records you during sleep to detect snoring or apnea.

• You definitely can! The apple health app recommend I download the "sleep watch" app and it works great. Gives you all the info you could want, and is free. I highly recommend it. Way better than the others out there like the pillow one.
