If your Apple Watch is GPS/Cellular it should not disconnect. I've left my phone and drove to another city and it never disconnected. If it is not cellular but its linked to your iPhone, you will see a red x at the top of your watch when it disconnects.

Please try again later.I am not 100%, but I remember when I had my Apple Watch for before it was stolen that I was never given a notification if it ever unsync from my phone. Now I know when I had my phone at home and I left it I could still receive texts and calls off of my watch. That would probably be something to look up on Google or Apple.com for that type of question.

Please try again later.To be exact, the watch will not send you a notification, on the non-cellular models or the cellular models WITHOUT a cellular plan, it’ll show a red phone with a dash through it to let you know you’re out of range, now if you have a cellular plan you pay for your watch, you’ll see the 4 dots of signal strength on your watch showing you how much signal you’re getting from your provider since it’ll work without the iPhone nearby.
