Your apps and data are paired with your iPhone. So it should be automatic once you pair your new watch. You can have 2 watches paired to your phone. Putting on a watch and raising your wrist sets which watch is active. Simple. I have an IFTTT app to toggle a non-HomeKit light. All I had to do was connect the new watch to the network, the app was already on my new watch. Setting up the watch faces would have to be redone. There are new faces and complications available, so setting up watch faces again is a must. I put different complications on different faces, so a left or right swipe gets me what I want without looking through the apps available through the crown. Hope this answers your question.
