“Half way through cycle we will shake or turn over food. And every time it resets the time and temp and we have to manually change it. Am I missing something. Instructions say it’s supposed to pick up where it left off.”

It runs on a timed cycle! When you add time or decrease time manually!Normal Cycle is 370 degrees for 15 minutes! You also can change Temp from cycle 370!
