“I have an Epson EX3240 projector that doesn't put out much sound. It's my understanding I need to hook speakers to my DVD player or laptop/ipad etc. instead of projector. Can I do this with these speakers to produce more sound for outdoor viewing?”

I would not use these speakers for outdoor viewing - not enough volume. For outdoor viewing, you should get something with at least 50 watts RMS per channel, and you might consider a portable sound system. I actually bought a Samson Expedition for exactly that use; I pair it with my projector and play video games on a wall-size projection display.
