Yes, there is a switch. Yes, but they are somewhat bulky on your ears, but they do stay put very well. Yes, there is a Play/Pause, Volume Up/Next, and a Volume Down/Previous buttons. Maybe, they are adjustable, but it really depend on how liberally you define "any head size". I will venture as far to say that they will fit most head sizes.

I wouldn't really recommend them for working out or jogging though as that isn't the intended use, it is susceptible to falling off and insulating body heat if used in that manner. Also, the ear cups are leather, so if you get sweat on them, they will feel sticky and unpleasant. And yes, there are controls on the right side of the back of the headphones; a double press of the middle button fast-forwards any currently playing music, and a triple press rewinds. One press will pause/play. There are also volume controls. And yes, they are adjustable for a large range of head sizes.

So, if you're looking to have them work with an iPod but NOT have the noise cancellation on, I don't think you can do that. It's a binary system. For me, that's fine as I tend to use these more when traveling than anywhere else. There are headphone controls for the volume and for pausing. I posted a review after having used these during a gym workout. I would NOT recommend these for jogging or working out. They're just not tight enough around the head. The padding makes it more for comfort than activity and they move around a great deal. They are adjustable to practically any head size.

The button between volume up and down is the pause/stop and double tap moves the music to the next song.Yes they are adjustable and fit most melon sizes.
