Can the color feature be locked, allowing B/W only ? null

I don't know about "being locked" but I would suggest in the printing preferences, you select to print in B&W or grey scale as your default.

Yes, to do that, go into the printer properties section to select the Black and White only option.

Yes, it can, just like any other printer. Select print in black and white only in your printing prompt, apply and save setting.
