How many quarts? null

This is not really the kind of fryer you would measure in quarts. The basket is probably two quarts but if you fill it up with anything it won't get crisp. The unit isn't a fryer, it's a convection oven. If you want something to get crisp like you would get from an oil fryer, you should probably stick with an oil fryer. It works great on things like frozen tater tots or other frozen foods like fish sticks, crab cakes and stuff like that but it's not for making fresh french fries or fried breaded zucchini. I use mine a lot but not as a substitute for a deep fryer. Hope that helps.
