• Yes, the unit will operate without the water filter. The filter only needs to be in the coffee maker when using tap water from the faucet.

• I use paper filters because they are disposable/recyclable with the grinds. About the filter yes but if you have hard water or water that does need to be filtered then it will affect the true taste of the coffee.
