“Is the slicing blade designed for different size slices? On mine, I turn a knob and the width of the slice can increase or decrease. Also, where can I find one that has the above disks if this one does not?”

The slicing thickness is fixed and cannot be altered. Not sure where one could find a disk like that for this model. Maybe shop for something else?
