I do not see this being problem. Each drone will have its own WiFi network that the controllers connect to. I am part of a drone group that goes out flying together and we have not had any issues with multiple drones in the air at the same time.

When you sink up everything on their own WiFi network you have to enter a WiFi password unique to your drone plus the remote has to sink to your drone through a sink mode. So as long as you do them one at a time they should work fine.
