“My PC is in a separate room than my Switch and Xbox One. Will this stream it through my wifi network or would I have to run a really long usb to connect it with my PC? Could I piggyback the stream through my phone instead of my PC if I had to?”

No, you will need a long cable. This will not connect via Wifi.
