“How many hours of continuous printing can this handle? I need to print 3,500 copies double sided. Can I print for 2 hours continuously, give it an hour break to cool down and print again? Or can it print only 30 minutes before getting too hot?”

Printing that kind of quantity regularly I would suggest a laser printer, not an ink jet. Just my opinion . . .
