“Can you set up this printer wirelessly? (Without using the CD-ROM?) It's 2019, y'all. Do people still use CD-ROMs???? My daughter's MacBook Pro does not have that capability--she needs wireless set-up. Please advise.”

My Lenovo laptop does not have a CD drive and the WiFi worked seamlessly for printing. I had to click on a website and download a utility. You could do that or use their app.

Yes, you download the software from Epson. The CD is for Windows computers. For MAc-no CD needed

Yes, you can set up this printer wirelessly. In fact, the quick set up guide uses this method. If your packaging did not include these printed instructions, you can access the wireless set up from the screen on the front control panel of the printer. It will walk you through set up. It is easy, but may take a few tries before it recognizes your wireless network.
