“If I scan 100 photos to “Summer 2001” then scan some to “Summer 1999” can I go back and scan more photos to the first folder without overwriting the numbering? If I scan 3 more photos to “Summer 2001” will they be numbered 101, 102 etc?”

Yes, definately. This is one feature I really like about the scanner because it's easy to go to any folder you've used for scanning, and continue adding photos to the previous file names that you have used in that folder.
