• Yes, I've used a v600 with El Capitan for a long time, works perfectly. I just updated to High Sierra and it works perfectly there, too, although I scan with VueScan software and not Epson's software. Epson's software shouldn't have any issues as Epson is usually very good at staying up to date with the Apple OS versions.

• Yes, that's what I'm currently using with the V600. Any Mac OS already has drivers for all epson scanners. You can use either Image Capture (included with every Mac OS) or Photoshop to use the scanner.
