“This range comes with a two sided griddle that is cast iron, but the Use & Care instructions say to wash it with soap and water and dry it off. Why is there nothing about seasoning the griddle (like normal cast iron)? Is it pre-seasoned?”

Probably because it's better to season your own cast iron products. I always clean anything that's been seasoned and re-do it myself anyways. Besides, it's a great way to use the oven in the beginning!
