In regards to the flames being uneven and making a noise, try to lift the burner cap (I won't recommend if it's hot. Do it when it's cold to the touch) then put it back in exact fit on top of the burner or in other words, fix the burner cap on top of the burner until the flames smooth out and no noise is heard. That might affect the color of the flame also. Sometimes the change in flame color to yellow or orange is caused by liquid being spilled on the burner or when you wiped clean the burner with wet cloth. Good luck.
