Would I be able to transfer documents from excel? null

Yes, you can download the excel app and use it like on a mobile device. You can save excel files to your drive account and either open a excel file or open the file as a google sheets file and then save as an excel. Microsoft and Google products play well together.

You have at least a couple of options. Import excel spreadsheets using Sheets, the native Google app for spreadsheets and then save as native Sheets workbooks or use Microsoft OneDrive and their free suite of Office Online apps. The latter does need WiFi to use. And i have not used the Microsoft Office apps from the Play store. But these will work on the Pixelbook as it supports Android apps.
