“I purchased about a year ago. Never had issues until now. Laptop is up to date and it’s been SUPER slow, especially when I open Edge. How can I fix this or what is the issue? I’ve already restarted it and it’s resolved for a few minutes then comes back”

Are you also running other programs while you're running Edge (or have a lot of tabs open)? Based on the processor and amount of RAM, that's the first thing I'd look at. You also might want to try a different browser to see if the problem goes away.
