Yes. Yes. Not very. BTW, HP is technically incorrect. Once S mode is eliminated, it can be restored--you just do a factory reset. This also wipes your drive, however.

To switch out of S mode in Windows 11, you can go to Settings, then System, then Activation, and then select Go to the Store. From there, you can select Get on the Switch out of S mode page. Once taken out of S Mode, you cannot go back.
