Yes you can print black without having fresh color cartridges.

As far as the ink automatically re-ordered, I've had that service for a few years (and I love it -- but I print more than most average people because I am president of a poetry society) and they only send a replacement when your ink gets down to a certain level, so they won't send you one if you don't need it (at least that's my own experience). As far as not printing in color, you get the most benefit from the service because it charges the same for color or black and white, so if you print only in black and white you are not taking the most advantage from the service. I'm not sure this instant ink service is right for you -- but it certainly is for people like me! I love it! Call HP because they are so reasonable and have excellent customer service.
