AskANotNinja, this is technically possible. However, your cabinet/counter needs to be shallow enough to not interfere with the gas spring arm. If that is the case, you can slide the arm down the pole and have a portion of your monitor sit below the cabinet/counter surface. How far below the surface depends on the size of your monitor and the positioning of the VESA holes on the back.
