What is the difference in core 7 vs core 8? null

It comes down to graphics performance. If you will use the computer for basic spreadsheets, word processing, internet browsing and or watching videos, then you will not need the 8 core. If you are a heavy user with coding, graphic rich games, video editing etc then you might want the 8 core. The 8 core iMac also comes with an extra fan (1 in the 7 core, 2 in the 8 core) but once again basic computer uses doesn’t require the 8 core.
