“I plan to use this in a barn, so lots of dust. Any suggestions on a way to protect the unit while in use? Some kind of cover? There IS a tack room, but I'm concerned the unit might overheat. I'm in New Mexico.”

This freezer is so inexpensive. I’d run it in the barn and just take a few minutes perhaps monthly to vacuum it off really good. Maybe hit it with compressed air. The temp range is like 0-110 Fahrenheit, so the tack room would probably be an option.
