“We have Sony WH-CH700N headphones and an LG SH3K Sound bar connected via an optical cable. Every time I connect the headphones via a Bluetooth transmitter it shuts down the Sound bar. This defeats the purpose. How about an optical cable splitter?”

You could try the headphones model NS-HAWHP2 and connect the sound bar to the docking station.
