You simply say, "Hey Google...set my alarm for 6:30 am Monday, 6:00 am Tuesday, 5:30 am Wednesday, and 7:00 am Thursday and Friday." If Google doesn't pick up on all of that the first time, just break it down. "Hey Google...set my alarm for 6:30 am Monday" wait a few seconds for a confirmation that your alarm was set for the correct time and day, then again say "Hey Google...set my alarm for 6:00 am Tuesday" wait again for the confirmation and so on.
