Does the ice maker HAVE to be hooked up? null

No. You do not have to use the ice maker. There is a power switch that you need to turn off if not using the ice maker. The switch is located on the front of the ice maker. I found it easy to locate by placing my head in the freezer.

We have it and it's not hooked up to water. Seems fine.

No, this ice maker does not have to be connected to water. You just will not have that functionality unless water is connected. ^CP
