• The griddle is removable you can use the burner for large pot, I have not done so as of yet.

• Yes, the griddle is removable and there is a long burner and grate under it. There are 5 burners and the whole top is grates. There are 3 heavy duty removable grates.

• Yes The griddle comes off, works just like any pan would. There is a grate under it.

• If you remove the griddle, there is one large burner beneath it. I prefer it that way so it doesn't interfere with large pots I put on the other burners.

• The center/oval burner is for use with a griddle or oval pots. ^Daphane
