“It says that service can be activated with your affiliated carriers like Verizon, at&t and more.. Once service activated by one of them can I use a different carrier or insert a new sim card after? Or how does it work? Does that mean we'll be in contract”

Just insert your sim and you're fine. If you bought unlocked then you're not under contract. You can switch phones whenever you want.
