This depends on the software you're using. Under Skype, this is possible as you can select the audio input line for your mic. I suggest that you check with the software you're using and view the settings available. I assume that most software will allow you to pick a different audio input line for your preferred microphone.

All you have to do is mute the camera's microphone (it the camera settings in OBS, you'll have that option) and plug the microphone you want to use and make sure it isn't muted.

All software is different so just open the settings and look for audio/video. You can also set the "default recording device" (audio only) in the Windows audio settings if you are using windows. Just right click on the little speaker icon in the bottom right corner. .
