“I have privacy concerns with Google's voice and data collection policies. Can I use the Nest mesh system without activating the voice component or consenting to any data collection? I just want the networking without Google's "helpful" spying.”

You can turn the speaker function off. You may also choose not to send Router/Point/Wifi statistics to Google when setting the product up.
