They say that it will but I was not able to see anything even close to that kind of speed.

Sorry, there was a problem. Please try again later.Yes as long as your modem has support for Link aggregation. That when you run two lines from the modem to the router and it combines the speed of each gigabit port to exceed the gigabit-speed. It also is a redundancy if one of the cables goes bad. You would have to also enable that setting in your modem after setup. I imagine if your modem has a 2.5 gigabit port it would also Exede to gigabit speed.
