“The instructions state DO NOT use outdoors. I'm curious as to why... I want to move it outdoors to grill but then will clean and move it back indoors. Would that be a no-no? Thanks.”

There would be no problem using it outdoors for the way you stated, use it, then take it back inside.

The grill works great outdoors as long as its supervisory its aware to keep it away from water... Then like always put away after cleaning and use...
