• The thickness is determined by the disc and there are no selections. I have not tried slicing potatoes but I think it would need to be medium to small ones.

• No, only one slicer slot. Potato must be cut to fit in the top opening.

• I believe so. My wife has done this very thing with sweet potatoes and then we air-fried them with the air-fryer we purchased at the same time as this food processor. It was a snap and be careful with the blades, THEY ARE VERY SHARP.
