“Does anybody know why this states that it comes with a steelbook that holds a disc when this is the Nintendo switch version? I'm looking for a switch steelbook which I got with my other Nintendo switch game pre-order but this one states that it's a disk.”

It's likely text copied and pasted without consideration for the Switch differing from other consoles by using cartridges. The steelbook is in fact a Switch style case both in size and cartridge storing capacity.
