“Does this need an adapter (attached image) to work on my xbox one controller? Or is it just plug and play?”

It needs an adapter if you have an original Xbox One controller. Only the newer ones have 3.5 ports.

Newer Xbox one controllers have a 3.5mm jack and will directly work with this headset. The headset has volume and mic mute controls. That said, I do really like to use an adapter so I don't have to take my hands off the controller
