“I have a 2015 ME18h704SFS and replacing it with the 2019 model. The interior of the 2019 has a flexible plate mounted to the top with metal screws (metal inside a microwave.hhmmm). Is that supposed to be there?????”

The plate is fine. It is an access point. Even though it has metal screws, they are made out of a certain type of metal just like the metal shelf that comes with the microwave. This will not harm the microwave.
