You can easily turn off the ice maker and water pitcher features, though I'm not sure why you would buy this model if you want to disable the water pitcher. Just buy one without that feature instead. The unit is too wide for a 30.5" opening with the doors attached. The narrowest point without the handles attached is just over 32". If you remove the doors you'll have to detach the water pitcher connections, which are both electrical wiring and water tubing.
