Instructions come with the phone if you buy online. It's really easy. The current phone is used until the new one is activated.

I don't know about online but I just clarified that I still wanted to use my old phone for a while when I was being taken care of in the store. I removed the sim card from my old phone and put it into the new one with no issues when I decided to switch over. I'm with Verizon and upgraded from the s7 to the s9.
