How do I delete vs using backspace? null

Tap-hold-drag on the text in question with your finger. Then input text as usual. The inputted text will overwrite the selected text.

Pretty sure by using the delete button on the book cover key board.

I think you can press either the fn and backspace or control backspace as a shortcut for the delete key.
