“Am I able to change my refresh rate and resolution? I use this monitor only for my xbox Series X and want to change these two depending on what game I'm using but all the videos I have watched online show a different interface than the one I'm using.”

Yes but those settings will be on your Xbox series x in display settings. That's where the 60/120 fps 1080/4k an etc settings will be. What ever settings you choose, the monitor will display those.
