“How can I adjust the brightness on this monitor? The option comes up when I turn it on, but disappears fairly quickly and I'm not sure what to do. There is not an option to change it from settings once the system is on. Thank you!”

You should be able to just push the power button on the back, and that will open up a small settings menu, from there you just use the power button almost as a joystick and go into the settings section and find brightness.
